EASY MEAT LOAF
1 (14 1/2 ounces) can stewed tomatoes with Mexican flavors (jalapeno, garlic, cumin)
1 (1 pound) lean ground beef (or ground chuck)
2 eggs beaten
1 cup crushed pork rinds or almond flour
Preheat oven to 350 degrees. In blender or food processor, process tomatoes about 10 seconds. In a bowl, combine all ingredient and add salt and pepper to taste Pack meat in a sprayed loaf pan. Bake about 1 1/2 hours or until done. Drain fat from pan 1 to 2 times during cooking.
