7-MINUTE BROCCOLI STIR-FRY
1 pound fresh broccoli florets
1 (8 ounce) package of fresh mushrooms, sliced
2 green onions with tops, sliced
1/4 cup slivered almonds
Spray skillet with Pam. Heat to high. Add broccoli and stir fry 2 minutes. Add 1 tbs. water, cover and cook, stirring frequently about 3 minutes until broccoli is crisp-tender. Add more water if necessary. Remove broccoli and put aside. Spray pan again and add mushrooms and green onions. Cook and stir until liquid from mushrooms evaporates, about 3 minutes. Return broccoli to pan, stir and heat until hot. Sprinkle with almonds and serve.
