4 boneless skinless chicken breast halves, rinsed, patted dry
1/4 cup Primal Kitchen mayonnaise
1/4 Italian seasoned crushed pork rinds for lower carb count)
1/4 cup grated parmesan or romano cheese
Preheat oven to 375F. Lightly spread mayonnaise on both sides of each chicken breast. In flat dish, mix breadcrumbs and cheese. Add salt and pepper to taste. Coat chicken with crumb mixture and transfer to baking sheet. Bake 45 minutes or until chicken is tender and juices run clear.
