KETOGENIC DIET: ULTIMATE DESSERT WAFFLES(click here to print)

Recipe Name: Ultimate Dessert Waffles

Ingredient List and Amount used:
1 cup blanched skinless Almonds, processed into flour
1 Jumbo egg
2 Jumbo egg whites
1 tsp baking soda
1/2 tsp baking powder
1/4 cup of melted coconut oil
1/2 cup Splenda (choice)
1/4 cup of Erythritol
pinch of salt
1/3 cup and a couple of tblsp more of ice cold Seltzer water
Recipe instructions: Whip the 2 eggs white until firm, set aside. In a food processor blend the almonds until they are like flour, then add the egg, coconut oil, baking soda/powder, salt. Blend again, it will form a hard dough. Then add 1/3 cup of Seltzer water, blend, then I add a few more tblsp to thin the batter to a pudding like consistency. Combine the batter to the whipped egg white and lightly stir until mixed. These took a little longer to cook, 1.5 minutes per side on a lower heat setting on the waffle iron.
