FRESCO FLAT BREAD

Ingredient List and Amount used:
10 egg whites or 2 cups of whites only
10 oz of crumbled Fresco cheese
1-1/2 cups of Almond flour or 2 cups of whole blanched almonds ground in a food processor
1 teaspoon of baking soda
1/3 cup of sour cream
dash of salt
1/8 cup of artificial sweetener (optional)
Recipe instructions: In a good Blender grind the whole almonds or add in the almond flour. Add the egg whites and blend till smooth. Next add in the crumbled cheese, sour cream and salt, blend on high for several seconds. I now add in a few slivers of onion and garlic and blend again. Have your pan ready, I use a commercial sized cookie sheet (18 inches by 13 inches) well greased with coconut oil. The final step is to add in the baking soda and blend on high just long enough to get everything mixed. The baking soda will start to react immediately, you need to pour the batter out as soon as you can, spread and place in a 400 degree oven for about 15 minutes. Brown the top under the broiler for the last minute.
General Comments : You can add in any spices while blending. Be sure to let it cool before eating. I keep this in the refrigerator but only after I let it dry on a cookie rack and come to room temperature.
