COOKIES: PINEAPPLE COCONUT SNOWBALLS(click here to print)

PINEAPPLE COCONUT SNOWBALLS


  • 1 (8 ounce) package cream cheese, softened
  • 1 (8 ounce) can crushed pineapple, well drained
  • 2 1/2 cups flaked, unsweetened coconut

Directions:

    When draining the pineapple, use a fine strainer to push as much juice out as possible. Otherwise you might end up with a watery snowball
  2. 2
    In a small bowl, beat cream cheese and pineapple.

    Mix well.
  4. 4
    Cover and refrigerate for 30 minutes.
  5. 5
    Roll mixture into 1-inch balls.
  6. 6
    Roll in coconut.
  7. 7
    Refrigerate for 6 hours or overnight.  Store in refrigerator.

6.4 carbs; makes 2 dozen
