Spicy Peanut Pork
4 boneless pork loin chops, 3/4 inch thick(5 ounces each)wel trimmed
1/4 tsp. black pepper
1/2 tsp. salt
4 medium geen onions, cut into 1 inch diagonal slices...
8 ounces snow peas, strings removed
1 tbs. minced, peeled fresh ginger
3 cloves of garlic, crushed with a garlic press
1 packet Splenda
1/4 cup Creamy Smuckers peanut butter, stirred
1 tbs. reduced sodium soy sauce or Briggs liquid aminos
1/8 tsp. cayenne pepper
3/4 cup water
Pat pork chops dry with paper towels. Sprinkle pork chops with pepper and salt. Heat skillet, add chops and cook 5 minutes on each side. Until no longer pink on the inside. Transfer pork to platter and cover with foil to keep warm. To same skillet, add green onions, snow peas, and remaining salt and cook 4 minutes longer stirring frequently. Stir in ginger and garlic; cook 1 minute. return pork to skillet. In a small bowl, stir peanut butter, splenda soy sauce, and pepper and water until blended. Pour peanut butter mixture into same skillet; heat to boiling over medium heat. Reduce heat, simmer 1 minute and serve. 8 carbs. serves 4
