- 2lb Pork Loin (How to butterfly a boneless pork loin click here )
- 4oz Cream Cheese
- Spinach Leaves (sauteed)
- Mushrooms (sauteed)
- Onions (also sauteed)
- 8-10 Slices of Bacon
- Tomatoes (optional)
- Blue Cheese Crumbles (optional)
Directions
- Saute your Mushrooms, Onions, and Spinach in a skillet over med-high heat
- Butterfly the Pork Loin and press flat
- Spread Cream Cheese over the top
- Top with the Sauteed Veggies
- Roll it up
- Wrap it in Bacon if you want
- You can cook directly on the grill, or place on a baking sheet an pop in the oven at 350F
- Cook for 45 minutes to an hour.
