TURKEY CRUNCH CASSEROLE
2 cups chopped cooked turkey or chicken

2 cups chopped cooked turkey or chicken
3/4 cup chopped celery
3/4 cup of mayonnaise
1/2 cup silvered almonds, toasted
2 hard boiled eggs, chopped
1 (2 ounce jar diced pimiento, drained)
2 tbs. chopped onion
1 1/2 cups crushed pork rinds
In a large bowl combine turkey or chicken, cream of chicken soup, celery, mayonnaise, almonds, eggs, pimiento, and onion. Transfer to a 2 quart rectangular baking dish. Sprinkle with crushed pork rinds. Bake at 350 degrees about 30 minutes or till heated through. Makes 6 servings. 6 carbs
