Recipe Ingredients for Shepherd's Pie with Cauliflower Topping
3/4 | lb. lean ground beef |
1/2 | onion, chopped |
1 | clove garlic, minced |
1 | carrot, chopped |
1 1/2 | teaspoons tomato paste |
1/2 | cup beef broth |
1 1/2 | (use 1/8tsp xanthan gum for low carb) |
1/2 | cup frozen green beans |
1/4 | cup frozen peas |
6 | cups cauliflower florets |
2 | ounces neufchatel cheese |
1/4 | cup cream |
1 | teaspoon olive oil |
1/4 | teaspoon salt |
1 | ground pepper to taste |
Recipe Directions for Shepherd's Pie with Cauliflower Topping
- Brown meat.
- Stir in onions, garlic . Cook 5 minutes.
- Add tomato paste, broth and xanthum gum
- Bring to a boil, stirring constantly.
- Add beans and peas and cook to thaw.
- Transfer to casserole dish. Top with mashed cauliflower.
- Bake at 350o for 30 minutes.

- Cook cauliflower florets until very tender. Using a potato masher, mash the cauliflower with the cream cheese, milk, olive oil, salt and pepper until smooth and creamy. 4 servings; 9.9 carbs
