I have just recently posted a recipe for brownies using almond butter. I had several people ask if they can use something else besides the almond butter. There is a recipe on this blog for brownies made with black beans, and I have also found a flour-less brownie made with avocado. I have tried all 3 and my personal favorite is the recipe using the almond butter. You may substitute natural peanut butter for the almond butter. Make sure you stir in the oil that's on top before using.
flourless} Avocado Brownies
Ingredients
- 8 ounces of melted dark chocolate
- 2 well mashed avocados
- 4 eggs
- 1 cup of Splenda or to taste
- 1/2 cup of cocoa powder
- 1/2 cup of almond meal
- 1/2 tsp salt
- 2 tsp vanilla
Instructions
- melt the chocolate
- {set aside}
- in the bowl of an electric mixer {fitted with the whisk}
- whisk together the eggs and the sugar {med-high} until VERY light and doubled in volume
- gradually add in the melted chocolate
- stir in the almond meal, cocoa powder, salt, and vanilla
- blend in the mashed avocado {make sure to blend well}
- pour into a square baking pan{lined with parchment or {WELL greased} 8 by 8 square
- bake at 350 for 20 - 25 minutes
- allow to cool completely before cutting
