VEGETABLE SIDE DISH: CAULIFLOWER RICE RISOTTO (click here to print)


Recipe by:  Facebook type 2 recipe group
Cauliflower rice Risotto

1 small onion chopped
2 tsp. garlic minced
4-6 mushrooms chopped
1 pkg. riced cauliflower
1/2 cup chicken stock
1/4 cup dry white wine
1/4 cup full fat cream (hwc)
1/2 cup grated Parmesan cheese
1/2 cup chopped fresh parsley
2 good handfuls of spinach ripped into small pieces
Salt and pepper
Coconut oil
Heat coconut oil in a non stick pan
Add onion & garlic cook 1 minute
Add mushrooms, cook 2 minutes
Add cauliflower, cook 1minute
Add 1/2 stock and wine, cook 1 minute
Add balance of stock and wine, cook 1 minute
Add cream, Parmesan, parsley, salt and pepper
Cook 1 minute
Take off heat and stir through spinach leaves
Eat straight away - enjoy!!
