TUNA MELT SANDWICH
4 (6 ounces) cans water packed tuna (put in a colander and squeeze all the water out)
1 celery stalk, chopped fine
2/3 cup regular Mayo (I love Primal kitchen made with olive oil)
1/2 cup chopped fine onions
1/2 cup chopped baby dills (optional)
1/2 tsp. chili powder
salt, pepper to taste
8 slices Fresco flat bread (click here for recipe)
4 slices Swiss or cheddar cheese
Combine all ingredients( except bread and cheese) in a medium bowl. Spread 2 tbs. mayo/tuna mixture on 4 slices of the flat bread. Top with cheese. Top with the other 4 slices of bread. Press together. Broil on oven rack for 2 minutes or until cheese is melted. Serve hot. Serves 4; 8 g. carbs
Note: If you have a Panini maker put one sandwich at a time in maker. Close and broil until cheese melts and you get the grill lines. Variation: top with a slice of tomato before broiling.
