DR. ATKINS VANILLA PUDDING RECIPE
This is from Dr. Atkins:
1 cup heavy cream, 1/2 cup water 8 large egg yolks, 1/4 cup granular sugar substitute, 2 tsp pure vanilla extract. Bring 2 inches of water to a boil in the bottom of a double boiler combine the cream, water, egg yolks, sugar sub.. Add vanilla extract. Set over simmering water and cook stirring constantly, until mixture thickens enough to coat the back of a spoon; about 4 minutes. Transfer to desert bowls; cover pudding with plastic wrap and refrigerate about 2 hours. 4 g. carbs
Tip: use a vanilla bean instead of the extract. Cut it open take out the seeds and cook it along with the cream, water, egg yolks and granular sugar substitute.
Add 1/4 cup dark cocoa to mixture before cooking for chocolate pudding; For mocha pudding add 2 tsp. coffee crystals
