CATFISH WITH SPICY MAYO SANDWICH

Spicy Mayonnaise

1/4 cup regular mayo (I like Hellmans)
1-1/2 tsp. capers, drained and chopped
1/2 tsp. paprika
1/4 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. onion powder
pinch of thyme
pinch of allspice

Combine mayo, capers, paprika, chili powder, garlic powder, onion powder, thyme, and allspice in a bowl, mix well. Set aside

Fish

2 tsp paprika
1 tsp. dried oregano
salt, pepper
4 (6 ounce ) catfish fillets
4 slices atkins cruisine bread (click here for recipe)
4 small leaves of boston or bibb lettuce
4 tomato slices

combine paprika oregano salt, and pepper in a small bowl. mix well. Sprinkle over catfish.
Heat 3 tbs. virgin olive oil in a large nonstick skillet over medium-high heat. Add fillets and sear, turning once until cooked through. 5 minutes per side.

To assemble: put one slice of toasted read on each of 4 plates. Top with lettuce leaf 1 slice of tomato, and 1 catfish fillet. Top with spicy mayo and serve right away.
