BUCKWHEAT TUNA SOBA SALAD LUNCH (for PALEO. ONLY....FOR LOW CARB USE SHARITAKI NOODLES)
Tuna Soba Salad Lunch     
Serves: 4
Ingredients
270g Hakubaku Organic Soba noodles (for low carb use Sharitaki noodles)
1 tuna, drained (med or large can)
1 cucumber, thinly sliced / julienned

1 spring onion, julienned
sesame seeds, toasted
Dressing
2 tbs mayonaise
1-2 tbs soy sauce
1 lime, juice and zest
1 tsp sesame oil
TIP: please test to see if you can eat buckwheat (soya) noodles. They are higher in carbs but do not get absorbed like most carbs. Contain an ingredient which removes them from your system quickly.
Method
Cook, drain and rinse the Hakubaku Organic Soba noodles. Combine dressing ingredients. Combine the Soba, flaked tuna, cucumber, and spring onions. Gently coat with the dressing. Top with toasted sesame seeds. Serve and enjoy
