SLOW COOKER: EGG AND BROCCOLI CASSEROLE(click here to print)

Egg and Broccoli Casserole
1 (24 ounce) small curd cottage cheese
1 package (10 ounces) frozen chopped broccoli thawed and drained
2 cups (8 ounces) shredded cheddar cheese
6 eggs beaten...
1/3 cup flour
1/4 cup butter, melted
3 tbs. finely chopped onion
12 tsp. salt
In a large bowl, combine all ingredients. Pour into a greased slow cooker. Cover and cook on high for 1 hour. Stir. Reduce heat to low; cover and cook 2 1/2 to 3 hours longer or until the eggs are set. Sprinkle with additional cheese if desired. Yield: 6 servings
