BEEF STUFFED PEPPERS



3 large green bell peppers, whole
1 onion, finely chopped
1 (1 pound) package lean ground beef (or ground chuck)
2 cups Ragu no sugar added spaghetti sauce

Cut peppers lengthwise into 2 halves. Remove stems, seeds and white membrane. In a saucepan, heat 4 cups water until it boils. Drop peppers and bowl 6 minutes of until crisp tender. Plunge into cold water and set upside down on paper towels and drain. In a skillet sprayed with Pam cook and stir onion until tender. Remove from skillet. Add ground beef cook and stir until it browns. Drain any fat off of meat and wipe skillet clean with a paper towel. Combine beef onion and 1 cup sauce. Mound mixture in peppers. Bake covered for 20 minutes. Remove cover. Heat remaining sauce and spoon over peppers. Serve
Note: Walden Farms also has sugar free spaghetti sauce in case you can't find the Ragu
