APPETIZERS: ZUCCHINI CHIPS (click here to print)

Zucchini Chips
1 zucchini, thinly sliced
2 eggs, beaten - set aside
Mix together:
2 cups crushed pork rinds
3/4 cup parmesan cheese
1/3 cup fresh basil
1 1/2 tsp red pepper flakes
1 tsp pepper
1 tbsp garlic powder
1 tsp salt
Dip zucchini slices in egg, coat with pork rind mix, place on cookie sheet. Bake at 450º F / 230º C for 15-20 minutes, flipping halfway.
Dip:
1/3 cup mayo
1 tbsp lemon juice
1 tbsp garlic powder
1/2 tsp salt
1 tsp pepper
Serves 6 - 8.2 grams carbs
