Healthy Low Carb and Gluten Free Soft Pretzels


  • LOW CARB PRETZELS

  • Pretzel Dough



  • 2 Tbs. Psyllium Husk Powder(click here to purchase)



  • 1 packet Active Dry Yeast



  • 1 cup Unsweetened Vanilla Almond Milk



  • 3/4 cup Unsweetened Applesauce



  • 4 Large Organic Egg Whites (reserve one of the yolks)



  • 2 tsp Butter Flavor



  • 2 cups Organic Soy Flour



  • 1 tsp Double-Acting Baking Powder



  • 1/2 tsp Baking Soda



  • 1/4 tsp Salt



  • 1/2 cup + 2 Tbs Coconut Flour



  • EGG WASH/TOPPING:



  • 1 Large Organic Egg Yolk



  • 1 Tbs Unsweetened Vanilla Almond Milk



  •  Sea Salt



  • Directions
    1. In a small bowl, whisk together the psyllium and yeast.
    2. In a large bowl, whisk together the almond milk, applesauce, egg whites and butter flavor. While whisking, sprinkle in the psyllium/yeast mixture. Whisk until smooth.
    3. In a medium-sized bowl, whisk together the soy flour, baking powder, baking soda and salt. Dump the dry over the wet and fold together with a rubber spatula.
    4. Shape the sticky dough into a ball and cover with plastic wrap. Place the bowl in a warm area for 1 hour (I used a warming drawer set to 90 degrees Fahrenheit).
    5. In a small bowl, add the coconut flour. Take about 2 tbs and dust it over the slightly risen dough. Gently fold the mixture until it absorbs the coconut flour, then dust another 2 tbs over the dough and fold again. Do this with the rest of the coconut flour, then knead the dough into a ball.
    6. Preheat the oven to 350 degrees Fahrenheit and line two cookie sheets with Silpats or parchment paper.
    7. Divide the dough into 8 equal-sized portions. Roll the dough into long logs and carefully shape into pretzels (the dough is somewhat delicate, so kneading isn't necessary). Carefully transfer the pretzels onto the prepared pans.
    8. In a small bowl, whisk together the egg yolk and almond milk.
    9. Brush the crescents with the egg wash and sprinkle with the salt. Bake for about 24 minutes, or until golden brown. Carefully transfer the Silpat/paper off the hot pan and onto the counter. Let cool slightly and serve warm.  These are best when served warm.

    ALMOND BUTTER(click here to print)

    Yield: Yields about 2 cups   ALMOND BUTTER

    All Natural Toasted Almond Butter
    INGREDIENTS
    • 4 cups raw almonds  
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cinnamon (optional)
    • 2 whole vanilla beans, finely chopped* (optional)
    INSTRUCTIONS
    1. Preheat your oven to 350F
    2. Place 2 cups of almonds in a single layer on a large baking sheet
    3. Place the almonds in the oven and toast them for 15 minutes, moving the nuts around a few times during the process.
    4. Allow the almonds to cool until they can be safely handled with your bare hands, then transfer them to the bowl of your food processor; add the remaining 2 cups of almonds, as well as the salt, ground cinnamon and chopped vanilla beans (if using).
    5. Process for a total of about 10-15 minutes, stopping to scrape the sides from time to time, until the butter becomes very smooth and creamy and almost liquid in consistency. It will return to a firmer, more natural state once it's had a chance to rest and cool down.
    6. Transfer to clean air tight glass jars and keep in a cool dry place for up to a few months.

    MAIN DISH: CHICKEN SCOTCH EGGS(click here to print)

    CHICKEN SCOTCH EGGS                                                         
    • 600g skinless, boneless chicken breasts
    • 8 hard boiled eggs, peeled
    • 3 cloves garlic, smashed
    • ½ red bell pepper, chopped
    • 1 large jalapeno pepper, seeded and chopped
    • 2 tbsp fresh ginger, chopped
    • 2 tbsp fresh coriander, chopped
    • 2 tbsp tomato paste
    • 1 tbsp paprika
    • 1 tbsp Dijon mustard
    • 1 tsp chipotle powder
    • 1 tsp Himalayan or fine sea salt
    • 1 tsp freshly cracked black pepper
    • ½ tsp ground fivespice
    • 1 tsp whole anise seeds
    • 1 tsp whole fennel seeds
    • 1 tbsp onion powder
    • 1 tbsp garlic powder
    INSTRUCTIONS
    1. Preheat the oven to 375F
    2. Lightly grease a muffin pan with coconut or olive oil; set aside.
    3. Add all the ingredients except chicken and hard boiled eggs to the bowl of your food processor and process until it reaches the consistency of a thick paste, about 1 minute.
    4. Add the chicken and process on pulse until the meat is finely ground and all the ingredients are completely incorporated. Divide into 8 equal portions.
    5. Lay a piece of plastic film onto your work surface and place one portion of meat right in the center. Flatten the meat into a roughly half inch thick circle, then place an egg in the middle.
    6. Gently slide your hand under the plastic wrap and lift the whole thing up. Use the plastic film to shape the meat around the egg until the egg is completely wrapped, then finish “shaping” it with your bare hands.
    7. Place the finished egg in the muffin pan and repeat process with the remaining eggs and meat.
    8. Place the Scotch eggs in the oven and set the timer for 25 minutes.
    9. After 25 minutes, take the pan out of the oven and carefully tilt it over the sink to drain the liquid that has accumulated in the cups.
    10. Place the pan back in the oven and continue cooking the eggs for an additional 5 minutes, or until nice and golden in coloration.
    11. Remove eggs from pan and set to "dry out" and cool on a cooling rack for about 5 minutes.
    12. Serve warm  serves 8; 5.5g. carbs

    1 cup almond flour(click here to purchase)
    1 cup whey protein powder
    1 tsp. baking powder
    1 tsp. baking soda
    2 tsp. ground cinnamon
    1/2 tsp. ground cloves
    1/4 tsp. salt
    2 eggs, beaten
    1/2 cup coconut oil
    1/2 cup Splenda brown sugar blend
    8 ounces plain yogurt
    1 tsp. vanilla extract
    1 can sugar free apple pie filling found at walmart
    1/4 tsp. pumpkin pie spice
    1/2 tsp. cinnamon

    combine almond flour, whey protein, baking powder, baking soda, cloves, cinnamon, salt in a small bowl.   combine eggs, oil, sugar, yogurt and vanilla extract in a bowl and beat well.  add flour mixture and stir just until moistened.
    Line a 13 by 9 inch baking dish with parchment paper and spray lightly with cooking spray. add cinnamon to apple pie filling. pour pie filling in bottom of pan. Dump  batter over apple pie filling and spread evenly. bake at 350 degrees for 30 minutes.

    Tip:  I like to cut up the apple pie slices into smaller pieces so I have enough to cover the whole bottom of the pan (evenly distributed)

    HOLIDAYS 2014: CRANBERRY SAUSAGE BITES(click here to print)

    CRANBERRY SAUSAGE BITES
    • 1 pound bulk pork sausage
    • 1 1/4 cup almond flour    
    • 1 cup shredded cranberry cheddar cheese
    • 2 tablespoons Dijon mustard
    • 2 teaspoons chopped fresh thyme (or red pepper flakes for a spicier version)
    • 2 teaspoons baking powder
    • 3/4 teaspoon salt
    • 1 small yellow onion, finely chopped
    • Cranberry sauce (optional, for dipping)   (click here for recipe)

    Method: 
    Preheat oven to 350°F. Line a large baking sheet with parchment paper. In a large bowl combine all ingredients. Shape mixture into twenty-four 1 1/2-inch balls and arrange on prepared baking sheet about 1 inch apart. Bake until cooked through and golden brown, about 30 minutes. Drain on paper towels. Serve warm or at room temperature, with low carb cranberry sauce for dipping, if desired.

    BROWN SUGAR FOOL
    • Honey Almonds
    • 1/3 cup sliced almonds
    • 1 tablespoon sugar free honey(click here to purchase)
    • Cherry Brown Sugar Fool
    • 1 cup pitted fresh sweet cherries
    • 1 teaspoon lemon juice
    • 1/2 teaspoon almond extract
    • 1 tablespoon splenda granular
    • 2 tablespoons water
    • 3/4 cup heavy cream
    • 2 tablespoons Splenda brown sugar blend    
    • 1 teaspoon vanilla extract

    Method: 
    Preheat oven to 400 degrees and line a baking sheet with a baking mat (e.g. Silpat).

    In a small bowl, coat nuts with honey. Spread nuts on the baking mat. Bake 7 to 10 minutes, until golden. Transfer nuts to a bowl to cool. Coarsely chop, and set aside.

    In a small saucepan, combine cherries, lemon juice, almond extract, splenda and water. Cook over medium heat, stirring frequently, until cherries begin to break down and juices boil and thicken, about 5 minutes.

    Remove from heat, and transfer to a small bowl. Place bowl in a larger bowl of ice water, and stir mixture occasionally until cold.

    In a separate bowl, combine cream, brown sugar, and vanilla and beat until stiff peaks form; fold in 1/3 cup of the cherry sauce. Combine, but not fully -- there should be beautiful cherry streaks running through the fresh cream.

    Divide among four dessert dishes, and spoon remaining cherries over tops. Garnish with the honey almonds.

  • As a type 2, I am no different than anyone else. I would like the same things that others would like. Just nothing food oriented........ Although my friend just outfitted my kitchen with new pots, pans and utensils. It certainly makes cooking healthy easier.
