SALADS: BERRY POPPY SEED SLAW (click here to print)

BERRY POPPY SEED SLAW
4 cups thin sliced green cabbage
1pint strawberries, washed, hulled and sliced thin
1large carrot, shredded
2tablespoons poppy seeds
1/4cup  Splenda or Stevia 
1/2cup raspberry vinegar, balsamic vinegar or red wine vinegar
2tablespoons lite olive oil
Salt and fresh-ground black pepper, to taste

Instructions

  1. In a large nonreactive bowl, combine cabbage, berries, carrot, poppy seeds, sugar, vinegar, oil, salt and pepper. Mix well and allow to rest 20 minutes before serving.  serves 6; 9 carbs
